taking out warming drawer of oven and replacing thermostat

The procedure for removing that warming drawer is shown in the first image below. The second image shows the parts diagram for that portion of the range. You may not be able to access that thermostat for the warming drawer from the front of the range. You will probably need to access it from the back. Be sure that you unplug the range before accessing internal components.

I don't have a specific procedure for accessing that thermostat. You may be able that parts diagram and your personal observation of the components to remove that thermostat. If you need more help, reply with additional details and we will try to assist you further.

I am sorry you are not getting the information you need.

The model you have is probably one of those models that are not designed to come apart. According to the manufacture you would need to use compressed air to do the best cleaning you can.

There are many models that were designed that way.

Is SAE 30 non-d oil an OK substitute for the (unavailable to me) 20 wt. oil for model 758 72923 humidifier?

You can use 30 weight non detergent oil in the humidifier. It will work fine as long as the room temperature is above 30 degrees.
