Is there something wrong with my PlasmaWave Air Purifier (model 85300) that revs up and down every second when it is on Auto Mode?

I called the manufacturer regarding this issue. The technician indicated that there is no time delay on the adjustment of the fan speed in the auto mode. It is likely normal that the fan speed is constantly changing as you describe. Since this mode is irritating, I recommend that you run it on a constant speed (Medium).

I have a kenmore plasmawave 85300. I just had my entire home sanitized but the air quality detector still shows poor. What triggers the detector?

The air quality sensor will react to odors. It is possible that it is reacting to the chemical that was used to sanitize your carpet. Carpets also tend to house dust and lint that will be detected by the sensor. It is normal to see the higher readings when the air filter is placed in a room with carpet rather than tile.

The double-red measurement indicates that a large volume of contaminants was detected. It does not distinguish harmful particles from harmless particles (or odors). The particles caused by having the carpet can be bothersome to some people but are not necessarily harmful. I don't think that you should be concerned about the carpet dust from a health standpoint unless it is apparently causing problems. If you want extremely clean air in your home, you may consider eventually eliminating the carpet. This is the current health trend in most homes.
