Thank you for your question and I understand your concern.

The oven thermostat controls the oven operation and temperatures. The pressure regulator will not resolve the issue.

Based on your symptom, the oven thermostat will need to be replaced. You will need to hinge the top open and remove the control panel/manifold cover in order to access and replace the oven thermostat. The thermostat will have a small diameter copper wire which is the temperature sensor. Be careful to not pinch or crimp this small copper tubing. The sensor is routed down through a small opening into the oven cavity which is then clipped/fastened inside the oven cavity so it can sense the oven temperature. It will either be fastened to the upper side or the ceiling.NOTE: Turn the gas supply off at wall and disconnect the power cord before servicing.
