Since the ice maker is cycling (even though it is only once a day) then that system is probably okay. Your details seem to indicate that the freezer temperature is only at 28 degrees. The freezer needs to be less than 14 degrees before the ice maker will cycle normally. I recommend that you check the evaporator for excessive frost and check the air flow through the refrigerator and freezer.
