Maytag Fridge - Water dispenser - works normally for 5-10 seconds then slows to a trickle and a thumping/knocking noise comes from lower back of the fridge.

I know that it can be very frustrating to have issues with your water dispenser.  The knocking sound that you are hearing is coming from the water line.  When there is a large amount of pressure built up in the line, it will begin to shake. This will then begin hitting the liner in the refrigerator, thus creating a knocking sound. The reason it does not do this with the ice maker, is because it is not using nearly as much water as the dispenser.  The pressure does not get a chance to build up.  The most common cause for this is a kinked or clogged line.  You will need to physically check the line to make sure this is not happening. Thank you for your question. I understand your concern about the fridge section freezing. The information you have received is good. First, check to see if the freezer is getting exceptionally cold (below zero degrees). If it is getting too cold, it can also cause the fridge side to get too cold. To check the temperature, place a thermometer between some packages. Air temp is not a good check. If the temperature is too cold, usually adjusting the thermostat to a warmer setting will correct this. If the temperature is ok, the most likely problem will be with the control damper # 12571701. If it gets stuck and does not close properly, it will allow too much cold air flow into the fridge section. I hope this will help you.
