Sorry to hear of the issues you're having with the Maytag refrigerator, I know how frustrating that is to have occur.
The ice maker and water dispenser issue could be caused by the water valve at the back-bottom no longer operating by opening the valves. This can occur over a period of time by mineral deposits that restrict the valves from operating correctly. 
I don't think the issue with the refrigerator compartment freezing has to do with the coils freezing. If the coils were freezing, it would indicate an issue with the defrost, and it would actually cause the refrigerator to warm vs. freeze. 
I suspect an issue with the damper control for the refrigerator freezing. If the control is stuck open and won't close, it will continually allow the chilled freezer air to enter and will begin to freeze the contents of the refrigerator. The damper control will need to be tested with a multimeter to be sure. The part number is W10127427.

Thank you for your question. I can understand your concern about the dispenser lever sticking. This could be caused by the switch sticking or the lever itself. To access the switch and lever, the front cover will need to be removed. First, disconnect the power to the unit. Pull out the bottom tray and you will see a couple of screws. Remove the screws and pry the bottom of the cover off. Now lift upward to remove the cover. With the cover removed you will be able to see the switch. It's part of the yoke assembly # 13005705, which may need to be replaced. Now, if the lever is what is sticking, you can try using some food grade silicone grease # 542638, to help it work smooth again. I hope this will help you.
