Thank you for contacting with your question about levelling your Kitchenaid cooktop in an unlevel countertop. I am so sorry to hear the countertop isn't level. I will be happy to help you with this.
I recommend you contact the contractor that installed the countertop. It is the contractor's responsibility to properly level the counter to prevent this situation. The contractor should be able to shim the counter to correct this problem. The reason it is better to shim the countertop, rather than the cooktop, is because shimming the cooktop will leave a gap between the counter and the bottom of the cooktop. This can make the shimmed edge of the cook top unstable and could cause a pot or pan to tip over. That is a serious safety concern. 
The installation instructions for the cooktop specifically says NOT to seal the cooktop to the countertop so adding a seal is not a option to correct this issue.
