You could have a control board this is "locked up" due to a power surge or glitch through the electrical lines. Unplug the range or shut off the house circuit breakers for 5 minutes to completely disconnect electrical power. Restore power and see if the control works normally. If not, then you probably have a component failure.

You could have a problem with the door latch assembly or with the electronic oven control board in the console. I posted some technical information about the door latch assembly in the first image below. The second image shows information about the connection of the door latch assembly on the control board. The third image shows that door latch switch circuit traced in wire colors. I provided some access information in the 4th image. I recommend that you unplug the range and check the resistance through that door latch switch circuit from the control board in the console. You should measure OL -- open load or infinite resistance through that circuit when the oven door is unlocked. If you measure near zero ohms of resistance (continuity or a "closed" condition) then you probably have a bad lock switch on that oven door latch assembly. Replacing the door latch assembly will probably fix your problem in that situation.

If you measure the OL during the above test then that electronic control board in the console will probably need to be replaced.

You can order parts from this page: GE Range Model JB680SP1SS Parts . Be sure that you unplug the range before accessing internal components and replacing parts.

If you need more help, reply with additional details.
