If the thermistor is defective you may need to replace the electronic board on top of the unit. Here is an image from the service manual that may help. I trust this information will help you.

How do I replace the sensor in my Whirlpool 40 gallon electric hot water heater?

Before replacing the thermistors (temperature sensors), I recommend shutting off the breaker and checking the plug for the thermistors on the control board. The image below shows the location of this plug on the control board. The second image provides technical testing information for the thermistor circuit. Using this technical information, you can make sure that you need the thermistor kit.

If the thermistors need to be replaced, you can purchase a kit part 6910545. You can order this kit from the Sears PartsDirect website. It costs about $18. The kit should have the wiring and will have thermistors that will fit into the brackets.

Thank you for your question. The best source of information for this model will be the manual .  Basically, in the smart mode, you set the temperature and the water heater maintains that temperature.  The energy smart mode allows the controller to determine the temperature based on household water use. So at times of lower usage, it will not necessarily heat to a set temperature, until needed. It does not go below the minimum, but there is no sense heating water when no one is home.
