Thank you for your question and I understand your concern.

I see by the model number that this is a 20 inch freestanding gas range with a small oven cavity using an 18,500 BTU bake burner. It would not be abnormal for a small oven cavity to reach operating temperature twice as fast as a conventional size gas range with a bake burner rated at 18,500 BTU's. You mentioned that it gets hot quickly but you didn't imply that it's burning food or if you see any flames leaping into the oven cavity. A good test is to bake a sheet of biscuits using an inexpensive can of biscuits following the instructions on the can. If the biscuits brown on top and bottom then there is nothing wrong with your oven.

You could also place a good quality oven thermometer inside the oven on the upper rack and set the thermostat for 350 degrees and start the oven. Wait for a least 4 cycles of the burner before opening the door and checking to see what the thermometer is reading.

There is likely nothing wrong with your range since replacing the thermostat didn't make any difference.
