Thank you for your question and welcome to Manage My Life. The three pistons under the swell control the stops for the swell, the three under the great for the great, and the four on the left (duplicated by the toe studs) control all stops. The one to the right of the crescendo pedal is the "Great to Pedal" reversible and cannot be changed.
Depress and hold the desired piston or toe stud, change the stops to your preference, and then release the piston or toe stud.

General rule: Look for a setter button. If there isn't one, look for setterboards. They may be hiding some distance from the console. If there is no sign of a setter button or setterboard, try the "hold-and-set" procedure described above. (Trying "hold-and-set" on some old Casavants can break off the knobs!)
