Sorry to hear of the issue you're having with the tractor intermittently stopping when it gets to op temp, I know how frustrating that is to have occur.

Next time the engine starts to die, loosen the fuel cap for ten seconds. If the engine smoothes out, I recommend replacing the fuel cap. The fuel cap has a vent that should allow air to replace the used fuel. If the vent is plugged, fuel will eventually stop flowing from the tank. This can cause vapor lock. The fuel filter and the fuel pump could also cause the same issue. 
If you do not think fuel is not the problem, you have to determine if the engine has spark. To check the engine for spark remove the spark plug wire and insert a screwdriver into the boot. Make sure to hold the handle of the screwdriver and position the exposed metal portion of the screwdriver close to something metal on the engine. A bolt head will work well. Then try to start the engine. You should see a spark from the screwdriver to the bolt head. This mean the coil is good. If you do not see a spark most likely the coil need to be replaced. If you see a spark the problem is most likely fuel related. A failing ignition coil can also cause this issue. 
If the spark looks good, disconnect the inlet hose from the carburetor, and with the ignition put to 'Start', you should see fuel coming out of the line from the fuel pump, if fuel is coming through, the pump is good.

I have provided you with the instructions for adjusting the valves below. I the question you have mentioned torque but did not specify what bolts. I assume you are referring to the lock nut but just incase I have provided the head installation instructions.
