Thank you for your question. The timer is just a timer. The timer does not control the time the oven bakes. You do have a timed bake option where you can slow cook up to 12 hours. I really cannot tell you if the meat is good. I am sorry. I will send you the manual where it explains the timed bake option. Click here

Thank you for your question and I understand your concern.

The convection fan motor could be faulty or possibly the fan blade is jammed against the fan cover. If the fan is not getting voltage and there are no loose or disconnected wires I would suspect a faulty electronic oven control. NOTE: I do not recommend checking voltage unless you have experience and feel safe and confident in doing so; otherwise I recommend calling a service technician to diagnose and repair your range.
