That range (full model number 790.72602010) does not have a safety feature that prevents gas from flowing from a burner if it is not lit (or has a flame-out condition). Gas will continuously flow from the burner until it is shut off.

The oven burners will not allow gas to flow unless the igniter is glowing hot enough to certainly cause ignition.

There are some ranges that have an automatic burner re-ignition feature that will cause the spark igniter to fire if there is no flame sensed but this model does not have that feature.

I understand your concern for safety regarding your grandmother. Unfortunately, this Kenmore model does not have the safety features that you are describing.

If you need more help, reply with additional details and we will try to assist you further.
