The defrost heater can make a popping, frying, sound as it heats up and defrosts the frost from the evaporator coil in the freezer section of the refrigerator. The defrost cycle comes on every 6-10 hours and the compressor, condenser fan motor, and evaporator fan motor turn off during defrost.

It is possible you are hearing the refrigerant boiling as it enters the evaporator coil. This is usually a tapping sound and can vary in loudness.
