I added an image of the sump cover below showing which two screws to remove in order to lift the sump cover off. NOTE: Be Careful when reaching down into the sump because there could be some broken glass lying in the bottom of the sump.

Thank you for your question and I understand your concern.

Generally speaking when food particles are left on dishes on the top rack is because a lack of hot water, water not hot enough or not loading the lower rack properly blocking the spray of water to the upper rack.

Check to make sure you�re getting a minimum of 120 degree water filling into the tub and make sure it's filling with enough water. The water should be covering the entire bottom of the tub.
