This is not a normal occurrence in the self clean cycle. This may happen if the oven is heavily soiled with grease.

Why doesn't the bake burner part WB16K10035 work on my Kenmore gas range model 362.75586891?

When the connector on the ignitor does not fit (which it apparently does not according to your details) then you should cut the wires and connect (splice) them with ceramic wire nuts. You must use porcelain or ceramic wire nuts that are specifically designed for use in situations where high heat is present so that they will not melt (like regular plastic wire nuts would). You should be able to get the ceramic wire nuts at your local hardware store.
