Thank you for your question and I understand your concern.

The oven igniter should not shut off until the oven reaches the set temperature. I assume the oven never reached the set temperature.

Based on your symptom it may have a faulty oven thermostat. If the contacts inside the oven thermostat opens before the oven reaches the set temperature the thermostat will break the electrical circuit to the glow bar igniter and then fad off and then the gas valve will shut off the gas.

In order to confirm if the oven thermostat is faulty will require disconnecting the two wires from the oven thermostat when the ignitor shuts off and test across the two terminals of the thermostat for continuity with an Ohm meter. NOTE: Be sure to disconnect the power cord from the wall before disconnecting the two wires from the oven thermostat.

I added a couple of images with the instructions on how to replace the oven thermostat if you find it faulty.
