Thank you for your question. Replacing the defrost thermostat and the defrost timer are tasks that require removing panels and covers on the inside of your refrigerator. I am assuming the refrigerator is already unplugged and ready to be worked on. I recommend replacing the timer first, and then the thermostat. Always unplug or de-energize electrical equipment before removing covers or attempting service. Be careful and wear appropriate hand protection when working around sharp metal parts.
I will give you the video links for the repairs. Both video are good and detailed and I think you will have no problem doing the repairs.

I will be happy to assist you. Replacing the start device is not a difficult repair. First, pull the refrigerator out from the wall so you have access to the backside of if. Then unplug the refrigerator from the outlet. Now look on the side of the compressor for the start device. The part has the wires going to it. You should see a thin wire that secures the start device to the compressor. Once the wire is removed, pull the old start device off the compressor. Before you disconnect any wires make sure the new start device looks like to old one. If it is the same, go ahead and switch the wires from the old start device to the new one. After the wires are connected, install the new start device in the reverse order.
