Thank you for your question.  This is an older ice maker but produces excellent product in most cases.  I am sorry yours is having an issue.  You replaced the part I would have suggested first, the valve.  Does the water continue to run after replacing the valve? If not but the ice is still thin, I would look at the cycling thermostat, part # 759309.  If it is malfunctioning, it would harvest in shorter and shorter cycles, producing thinner ice.  The thermostat for the evaporator may not be regulating the temperature causing everything else to cycle out of sequence.
