Without that cover in place the condenser fan, the one you can see when you lo through the 'hole' will not circulate the air over the condenser or the drain evaporation pan correctly. you can make a cover easily enough with a piece of fibre board or thin plywood and just secure it over the 'hole' so that only minimal air leakage occurs round it. I would not bother with the insulation. We have a similar model that has not had any insulation on it for years, efficiency is likely 'down fractionally but not enugh to notice. Good luck

Thank you for your question and I understand your concern. The refrigerator will not cool properly with the card board barrier missing. The card board barrier allows air to be drawn in from the front and across the condenser coils instead of pulling air from the rear. The condenser fan and card board barrier causes air to be drawn in from the front instead of the rear. The air must be drawn through the condenser coils in order to remove heat. You can make a barrier out of large piece of card board. Cover the opened area and cut a few vent holes along the right hand side as your looking at it from the rear. I added an image of rear card board barrier so that you see the cut out areas.
