I'm looking at your model number 10656839603 and here is a link that explains what the defrost thermostats function is and how it works. It is very possible only one of the items has failed and replacing parts the manufacturer recommends replacing both items being that they work with each. If you have a testing meter you are able to test the parts and determine which has failed. There is also helpful videos online that teach how to use a multimeter and how to test. I do not recommend that you perform these tests if you are unsure of what you are doing. Here is a link on how the bi-metal thermostat works.
