Thanks for the inquiry about the ice making problem, sorry you are having this issue.
Ice makers are very sensitive to temperature, in order for the ice maker to begin a cycle the freezer temperature must be near 0 degrees and this temperature must be maintained.

If you are sure this sporadic issue is not caused by up and down temperatures (like door openings, sudden heavy usage or added food loads and even outside temperature rises.) Then there could be other components causing this poor ice production.

I am attaching images below on testing the ice maker; follow the instructions to determine if the ice maker needs to be replaced. #1 old style #2&3 modular style (most likely yours)
